Cooking is for everyone. While I was a professional line cook, when I cooked at home, I felt extreme anxiety. There's so many rules in an industrial kitchen. Not just cleanliness and safety, but making a dish correctly and instagramable. The pressure carried to my private kitchen, where I felt I couldn't do anything right and the product needed to be perfect. I made tons of mistakes when I was cooking with anxiety and then I'd beat myself over it. Once I left the restaurant industry, it took several years to feel confident in my own kitchen. Once the anixety around cooking dropped, I started to enjoy cooking.
There is no pressure in your private kitchen. You will make mistakes and quickly learn from them. You will figure out how to season everything to your liking. Cooking doesn't have to be serious and stressful. You're food does not have to be perfect! Your food is for you and anyone you cook for is going to be grateful for your kindness and delicious meal. And if it tastes like crap, so what! Trial and error. I hope these recipes make you feel confident at cooking.
Before my career in tech, I was a culinary dropout and a cook of 11 years. The service industry shaped my work ethic and the person I am today. I am incredibly proud to have this experience under my belt. My skills transferred to tech and I was able to thrive with less experience than most.
Without my experience in the service industry, I probably wouldn't be as successful as I am today. The restaurant industry is a difficult field to endure. Abuse, verbal and physical, are normalized. You are worked to death. Required to work just under 39 hours a week so they can deny you health benefits. There's no choice but to work multiple jobs. After working 60 hour weeks, you still can't make ends meet. You're told to go to college but it's impossible. I worked 2 jobs, around 50 hours a week, while going to school full time. I couldn't afford to stop working. It took me YEARS to finish my Associate in CIS and if I had the resources, I would have been able to get my bachelors, likely in the same amount of time.
Not everyone can easily cook for their self.
It's important to touch on accessibility in cooking. It is a privilage to be able to cook for yourself.
